I see sometimes words are missing from the dictionaries on the English site. But they are on some of the lessons. For example, I see that nobi is in the course, but not in any of the dictionaries at the moment. I remember seeing on the Pandunia subreddit that the dictionary was getting re-checked. And I see that there some other dictionary stuff happening recently.
If I do see missing words, is okay to try something like a pull request on github (it would be good practice for me, since I'm learning git and github) or is it better to let you know, Pandunia-guru, for dictionary stuff?
(I am mostly posting here should anyone have a similar question!)

At the moment it is best if you tell me.
The dictionary is moving to Panlexia. If you are brave, you can also create a pull request there. In that case you should add the word in pandunia.tsv with a concept id from master.tsv. (If a suitable concept doesn't exist yet, you should create one. In that case it would make sense to have a translation for the same concept in at least one other dictionary, like eng.tsv, which is the English word list.)
Panlexia is still very much under construction but the framework is ready and there is a demo of generated dictionaries for Pandunia to prove that the system works.
